Delicious spinach and feta frittata, perfect for any meal. Pair with cherry tomatoes or fresh fruits for a delightful combination.
Ingredients:
  • 1 tablespoon unsalted butter
  • 0.5 cup chopped onion
  • 1 cup Potato, red, flesh, cooked, baked
  • 0.5 (10 ounce) package frozen chopped spinach - thawed, drained, and squeezed dry
  • 1 (4 ounce) container crumbled feta cheese
  • 6 large eggs, lightly beaten
  • 0.25 cup heavy cream
  • 0.5 teaspoon smoked sweet paprika
  • 0.5 teaspoon salt, or to taste
  • 0.25 teaspoon ground black pepper, or to taste
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C).
  • In a 10-inch, oven-proof skillet over medium heat, melt the butter. Saute onions until translucent for about 2 minutes. Add potatoes and spinach, then remove from heat. Finish by sprinkling with feta cheese.
  • Combine beaten eggs, rich heavy cream, flavorful paprika, and a dash of salt and pepper in a bowl, ensuring they are thoroughly mixed. Gently pour this velvety mixture over the luscious cheese and colorful vegetables.
  • Bake the skillet in the preheated oven until the eggs are set and the top is lightly browned, about 20 to 25 minutes. Remove from the oven, let it cool slightly, and serve warm.
