Apple noodle salad with tangy vinaigrette - a refreshing twist on fruit salad!
Ingredients:
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons white balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey, or more to taste
  • 2 unpeeled Granny Smith apples
  • 1 unpeeled Red Delicious apple
  • 0.5 lime, juiced
  • 1 tablespoon pine nuts
Instructions:
  • Combine olive oil, white balsamic vinegar, Dijon mustard, and honey in a small bowl and whisk into a flavorful dressing.
  • Spiralize Granny Smith and Red Delicious apples into noodle shapes using a spiralizer with the large shredding blade.
  • In a large bowl, gently toss apple noodles with lime juice to prevent browning. Add dressing and mix until salad is well combined.
  • In a small skillet over medium-low heat, toast the pine nuts until golden brown, about 5 minutes, shaking often. Sprinkle the toasted pine nuts over the salad.
