Apple-Cranberry Tart

Spiralize apples, toss with lemon, cinnamon, and dried cranberries for a stunning tart.
Ingredients:
  • 0.25 cup dried cranberries
  • cooking spray
  • 2 Granny Smith apples, peeled
  • 1 teaspoon lemon juice
  • 0.5 teaspoon vanilla extract
  • 2 tablespoons white sugar
  • 1 tablespoon cornstarch
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 1 (9 inch) prepared pie crust
  • 1 egg white, beaten
  • 1 tablespoon turbinado sugar, or to taste
Instructions:
  • Place cranberries in a small bowl and cover them with boiling water. Allow them to soak until they become plump, which usually takes about 15 minutes. Then, drain the cranberries.
  • Heat your oven to a toasty 350 degrees F (175 degrees C) and lightly grease a baking sheet with cooking spray.
  • Using a sharp knife, create a deep vertical slice on both sides of each apple, making sure not to cut through the core. Spiralize one apple with a straight-flat blade to create thin half-slices, then repeat with the remaining apple.
  • Mix fresh cranberries, apple slices, tangy lemon juice, and aromatic vanilla extract in a bowl until evenly coated.
  • Combine white sugar, cornstarch, cinnamon, nutmeg, and salt in a bowl, then fold it into the apples.
  • Flatten pie crust into a 10-inch circle on a floured surface, then carefully move it onto the baking sheet.
  • Place the delightful apple mixture in the center of the crust, ensuring a generous 2-inch border. Gently fold the edges of the crust around the apples, creating a beautiful tart. Brush the edges with egg white and generously sprinkle turbinado sugar all over.
  • Bake until apples are tender, crust is golden brown, 38 to 40 minutes. Serve on a plate and slice.
