Transform traditional naan with a rich ricotta blend and spiralized squash - ideal for any meal or snack.
Ingredients:
  • 1 small yellow squash, sliced
  • 0.25 red bell pepper, thinly sliced
  • 0.25 medium red onion, thinly sliced
  • 1 teaspoon olive oil
  • 0.33333334326744 cup ricotta cheese
  • 1 teaspoon lemon zest
  • 1 naan bread
  • 0.25 cup shredded Gruyere cheese
  • 1 pinch red pepper flakes, or to taste
  • salt and ground black pepper to taste
  • 1 teaspoon chopped fresh basil, or to taste
  • 1 lemon, cut into wedges
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • Spiralize squash using a spiralizer with the large shredding blade.
  • In a medium bowl, mix together squash, bell pepper, onion, and olive oil until well combined. Set aside.
  • Blend ricotta cheese and lemon zest in a small bowl. Spread the creamy mixture evenly on the naan, keeping a half-inch border. Sprinkle Gruyere cheese over the ricotta layer. Top with the squash mixture, spreading it out evenly. Finish with a sprinkle of red pepper flakes, salt, and pepper. Transfer onto a baking sheet.
  • Place in the preheated oven and bake until the bottom is crispy and the edges are golden brown, for approximately 12 minutes. Top with fresh basil and accompany with lemon wedges for an extra burst of flavor.
