Hearty and comforting soup for a cozy day, made with easy ingredients.
Ingredients:
  • 1 white onion, finely chopped
  • 3 cloves garlic, pressed
  • 4 small red potatoes, diced
  • 1 cup peeled, diced carrots
  • 1 pound dry green split peas
  • 4 cups vegetable broth
  • 1 (16 ounce) package soft tofu
  • 1 (6 ounce) bag fresh spinach, finely chopped
  • 1 tablespoon dried basil
  • salt and pepper to taste
Instructions:
  • Saute the onion and garlic in heated olive oil until tender in a skillet over medium heat.
  • Combine the onion mixture, potatoes, carrots, and split peas in a large pot. Pour in the vegetable broth and bring to a boil. Lower the heat to simmer for 1 hour.
  • Blend the tofu and spinach in a blender or food processor until creamy. Mix the mixture into the pot. Season with basil, salt, and pepper. Cook for 1 hour. Adjust thickness by adding water if needed. Serve hot and enjoy.
