Spooky Calzone Snake

Snake-shaped calzone filled with gooey cheese and your favorite pizza toppings - perfect for slicing and sharing!
Ingredients:
  • 1 teaspoon white sugar
  • 1 cup warm water (110 degrees F/45 degrees C)
  • 1 (.25 ounce) package active dry yeast
  • 1.5 teaspoons kosher salt
  • 3 cups all-purpose flour, divided
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese, or to taste
  • 1 (4 ounce) package sliced pepperoni
  • 1 tablespoon chopped fresh parsley
  • 0.5 cup sliced black olives
  • 0.5 green bell pepper, cut into strips
  • 0.5 cup sliced fresh mushrooms
  • 1 egg
  • 1 tablespoon water
Instructions:
  • In the bowl of a stand mixer fitted with a dough hook, combine sugar with warm water until dissolved. Sprinkle yeast over the water and let it sit for 5 minutes until it softens and forms a creamy foam. Add oil, salt, and 2 cups of flour; mix on Low until a wet dough forms. While the machine is running, gradually add 1 cup of flour, 1/4 cup at a time, until dough forms a ball and pulls away from the sides of the bowl. Knead for an additional 3 to 5 minutes until the dough is smooth and elastic.
  • Oil a large bowl, add the dough, coat it with oil, cover with a towel, and let it rise in a warm place until it doubles in volume, approximately 1 hour.
  • Mix together the ricotta, mozzarella, Parmesan cheese, pepperoni, parsley, Italian seasoning, olives, green pepper, and mushrooms in a large bowl; set aside.
  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Flatten and extend the dough into a 9-inch wide by 30-inch long strip. Spread the filling down the center, leaving a 1-inch border. Fold the dough over the filling and seal the edges. Shape the filled dough into an "S" on parchment paper, tucking the ends underneath. Whisk the egg with 1 tablespoon of water and brush over the calzone.
  • Place the calzone in the preheated oven and bake until golden brown, which should take approximately 30 to 35 minutes. Allow it to cool for 5 minutes before slicing into individual servings.
