Spring Celebration Mini Bundt Cakes

Elegant mini spring bundt cakes made easy with shortcut ingredients like yellow cake mix and vanilla frosting. Delightful pink swirl inside for a show-stopping dessert.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1 tube (0.67 oz) Great Value™ pastel pink gel food color (about 2 1/2 teaspoons)
  • 3/4 cup from 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting (from 16-oz container)
  • 1 tablespoon Great Value™ pastel-colored sprinkle mix
Instructions:
  • Preheat the oven to 350°F. Thoroughly spray a 12-cup nonstick mini fluted tube cake pan (each cup measuring 4x1 3/4-inch) with baking spray that includes flour. In a large bowl, use an electric mixer on medium speed to blend the cake mix, water, oil, and eggs for about 2 minutes, remembering to scrape down the sides of the bowl occasionally.
  • In a small bowl, mix 1 teaspoon of pink food color into 1/2 cup of the batter until well combined. Divide the yellow cake batter evenly among the cake pan cups (about 1/3 cup each). Spoon 2 teaspoonfuls of the pink batter onto the yellow batter in each cup. Swirl the colors together by stirring in a circular motion 2 to 3 times using a table knife.
  • Bake for 14 to 17 minutes, or until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes. Gently loosen the sides of each cake with a small, thin metal spatula; flip them onto a cooling rack, and remove the pans. Allow the cakes to cool completely, about 30 minutes.
  • Prepare a cooling rack with cakes on top of a cookie sheet or waxed paper. In a small microwavable bowl, combine frosting and the leftover pink food color (approximately 1 1/2 teaspoons). Mix well and microwave uncovered on High for 10 to 15 seconds, stirring until it reaches a smooth glaze consistency. If needed, heat in additional 5-second intervals, stirring each time, until desired consistency is reached. Gently drizzle 1 tablespoon of the glaze over the cakes, allowing some frosting to drip down. Lastly, sprinkle the tops of the cakes with colorful sprinkles.
  • Allow the dish to cool and breathe at room temperature.
