Prosciutto prawns with basil aioli

Ingredients:
  • 1 egg yolk
  • 11.80 gm dijon mustard
  • 21.00 gm lemon juice
  • 125.00 ml basil leaves
  • 113.75 gm olive oil
  • 9 slices prosciutto
  • 36 green king prawns, peeled leaving tail intact, deveined
Instructions:
  • For the basil aioli, combine egg yolk, mustard, lemon juice, and garlic in a food processor until creamy. Add basil and pulse until finely chopped. Gradually pour in oil while blending until smooth. Season with salt and pepper to taste. Enjoy!
  • Begin by delicately slicing the prosciutto lengthwise into quarters using a sharp knife. Next, elegantly wrap each prawn with a strip of prosciutto and arrange them on a plate. Once all prawns are beautifully wrapped, heat up a barbecue or chargrill on high. Finally, artfully drizzle oil over the prawns to prepare for cooking.
  • Grill the prawns on high heat, turning occasionally, for 3-5 minutes until they change color, curl, and get a nice char. Place them on a platter and serve right away with basil aioli for a delightful meal.
