Elevate Zatarain's jambalaya mix by adding spicy andouille sausage, sweet onions, and zesty tomatoes with green chiles for a flavor-packed dish.
Ingredients:
  • 1 tablespoon olive oil, or as needed
  • 38 ounces andouille sausage, sliced
  • 1 medium onion, chopped
  • 2.5 cups water
  • 2 (8 ounce) packages jambalaya mix (such as Zatarain's®)
  • 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), drained
Instructions:
  • In a large pot over medium-high heat, cook the sausage with the onion until the sausage is browned and the onion is translucent, about 7 to 10 minutes.
  • First, gently pour water into the pot before mixing in the flavorful jambalaya mix and adding diced tomatoes with chile peppers. Let the delicious mixture come to a boil. Lower the heat, cover the pot, and let it simmer until the water is mostly absorbed and the rice reaches a tender consistency, which should take around 25 minutes.
