Create homemade sriracha sauce for a bold kick.
Ingredients:
  • 10L unchlorinated water
  • 575g salt
  • 2kg long fresh red chillies
  • 2 garlic bulbs, peeled
  • 600ml apple cider vinegar (see notes)
  • 400-600g brown sugar (see notes)
Instructions:
  • Combine water and 500g of salt in a clean, large bucket. Mix thoroughly by hand until salt is dissolved. Add chillies and stir mixture. Cover with plastic wrap and a lid, then let it sit for 10 days. Each morning, stir vigorously to create a vortex.
  • After preparing, strain the chilies and discard the stems. In a food processor, blend the chilies with garlic, vinegar, 400g of sugar, and most of the remaining salt in several batches. Blend thoroughly after each batch. Adjust the sriracha to taste with additional sugar and salt, blending well after each adjustment. Transfer the sriracha to sterilized jars and store in the fridge, where it will last for up to 12 months.
