Indulge in a decadent brunch delight: bacon-wrapped filet mignon with sunny-side up eggs - a delicious and satisfying protein-packed dish for a special occasion.
Ingredients:
  • 2 (5 ounce) filet mignon
  • 1 tablespoon steak seasoning
  • 1 teaspoon salt
  • 2 slices thick-cut bacon
  • 2 tablespoons clarified butter, divided
  • 2 large eggs
Instructions:
  • Massage the steaks with steak seasoning and salt, then wrap each one with a savory slice of bacon. Allow them to rest at room temperature for approximately 20 minutes.
  • Preheat the oven to 400°F (200°C) for the perfect baking temperature.
  • Add a luxurious touch to your dish by melting a sumptuous tablespoon of butter in a cast iron skillet over medium heat. Introduce the steaks to the sizzling skillet and give them a perfect 1-minute sear on each side.
  • Place the skillet in the preheated oven and bake until the steak reaches medium-rare or medium doneness, which should take about 6 to 8 minutes. Use an instant-read thermometer to check for a temperature reading between 130 to 140 degrees F (54 to 60 degrees C) in the center.
  • Take the steaks out of the oven and place them on a plate. Cover loosely with foil to allow the juices to set while you prepare the eggs.
  • Remove any extra grease from the skillet, introduce the remaining 1 tablespoon of butter, and heat over medium heat. Carefully crack eggs into the skillet, ensuring the yolks remain intact while cooking them sunny-side up.
  • Add 1 tablespoon of water to the skillet to create a burst of steam, cover right away to gently cook the eggs. Cook until the egg whites are set but the yolks remain runny, about 1 to 2 minutes.
  • Plate the food alongside the steaks.
