Delicious potato salad with eggs, cucumber, and bacon, perfect with burgers or steak.
Ingredients:
  • 8 red potatoes
  • 6 slices bacon
  • 1 cup mayonnaise
  • 1 cucumber, chopped
  • 0.5 cup chopped red onion
  • 3 hard-cooked eggs, chopped
  • 1 cup celery, chopped
  • 0.5 cup chopped fresh parsley
  • 1 tablespoon paprika
  • 1 hard-cooked egg, sliced
  • 3 sprigs fresh parsley, or as desired
  • 1 pinch paprika, for garnish
Instructions:
  • In a large pot, cover potatoes with salted water and bring to a boil. Simmer over medium-low heat until tender, around 20 minutes. Drain and let cool before chopping and transferring to a salad bowl.
  • Cook the bacon in a large skillet over medium-high heat, flipping occasionally, until evenly browned, about 10 minutes. Drain on paper towels and crumble once cooled.
  • Combine mayonnaise, crumbled bacon, cucumber, red onion, 3 chopped eggs, celery, 1/2 cup parsley, and 1 tablespoon paprika with the potatoes, mixing well. Season with salt and black pepper to taste. Top salad with slices of hard-cooked egg, fresh parsley sprigs, and a pinch of paprika for garnish.
