Italian-inspired grilled steak salad with arugula and Parmesan, perfect for a summer meal al fresco with friends and wine.
Ingredients:
  • For the salad
  • 5 ounces (about 6 cups) baby arugula
  • 2 tablespoons olive oil, plus more for serving
  • Salt and pepper, to taste
  • 1/2 cup (1 ounce) shaved Parmesan Cheese
  • For the steak
  • Vegetable oil (for the grill)
  • 2 (1 1/2-inch thick) sirloin steaks (about 1 3/4 pounds)
  • 2 lemons, cut into wedges (for serving)
  • Olive oil (for serving)
Instructions:
  • Prepare the salad by mixing arugula with 2 tablespoons of olive oil, seasoning generously with salt and pepper, tossing again, adding Parmesan Cheese, and dividing among four plates.
  • Prepare the grill: For charcoal grills, light a chimney filled with charcoal and wait until the coals are hot with a layer of gray ash. Distribute the coals for varying cooking zones, cover with the grate, and preheat for 5 minutes. For gas grills, heat one burner to high and the other to low (225°F). Oil the grates by dipping a paper towel square in oil using tongs.
  • Grill the steaks: Coat the steaks in olive oil, season with salt and pepper, and grill on high heat until charred on one side, about 3 to 4 minutes. Flip the steaks and continue grilling for 3 more minutes or until desired doneness. Adjust heat as needed. Rest the steaks for 5 minutes under foil before slicing.
  • Serve by arranging the sliced steaks over the arugula on each plate. Drizzle with olive oil, squeeze lemon juice over the top, and sprinkle with extra salt and pepper to taste.
