Succulent New England steak tips with a perfect caramelized crust and tender, juicy center - quick, easy, and oh-so satisfying!
Ingredients:
  • 1/2 cup ketchup
  • 1/4 cup red wine vinegar
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup water
  • 4 ounces Coca-Cola
  • 1/2 tablespoon Worcestershire sauce
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon oregano
  • 1 3/4 teaspoon Diamond Crystal Kosher Salt (or 1 teaspoon Morton Kosher Salt), plus more for your seasoning
  • 1/2 teaspoon black pepper
  • 2 pounds steak tips, cut into 2-inch pieces
  • Canola oil, for searing
  • 2 tablespoons finely minced parsley, for serving (optional)
Instructions:
  • Prepare the marinade by whisking together ketchup, vinegar, oil, water, Coca-Cola, Worcestershire sauce, garlic powder, oregano, salt, and pepper until smooth in a large bowl. Add the steak and coat well. Cover and refrigerate for at least 30 minutes, or up to 4 hours for optimal flavor.
  • - Prepare the steak: Using tongs, transfer the marinated steak to a plate, letting excess liquid drip off (keep the marinade). Heat 1 tablespoon canola oil in a large cast-iron skillet over medium-high heat until shimmering and smoking. Cook the steak in a single layer without crowding for 2-3 minutes until deeply browned. Flip and cook for another 2-3 minutes to your preferred doneness. Remove to a plate, cover with foil to keep warm. Repeat with the remaining steak, adding more oil if needed.
  • Prepare the sauce: While the meat cooks, in a small saucepan over medium heat, simmer the leftover marinade for 10-15 minutes, stirring occasionally, until thick and syrupy. Season with more salt to taste. Keep warm on low heat after reducing.
  • Plate the steak with a side of sauce and serve promptly. Enjoy while hot! Refrigerate any remaining steak and sauce separately in sealed containers for 3-4 days. Reheat the steak in a 350°F oven for 8-10 minutes to warm. Share your feedback by rating and commenting below!
