Steak with roasted tomatoes, beans and cauliflower puree

Healthy, low-fat family meal idea.
Ingredients:
  • 500g tomato
  • 3 anchovies, finely chopped
  • 1 pinch ground chilli
  • Sea salt & freshly ground pepper
  • Olive oil spray
  • 20.00 ml chopped fresh basil
  • 1/2 (about 600g) cauliflower, cut into florets
  • 1 potato, peeled, chopped
  • 60ml cream
  • 4 (about 160g each) scotch fillet steaks
  • 150g green beans, cut into short lengths
Instructions:
  • Preheat your oven to 200°C. Combine cherry tomatoes, anchovies, garlic, and chili flakes in a baking dish. Season with salt and pepper, then coat everything evenly with oil spray. Bake for 20-25 minutes until the tomatoes are just collapsing. Finish with a sprinkle of fresh basil before serving.
  • Cook cauliflower and potato in boiling water until tender. Drain, return to the pan, add cream, mash until smooth, and season with salt and pepper. Keep warm.
  • Preheat a barbeque or chargrill pan over medium-high heat. Lightly coat the steaks with oil and season with salt and pepper. Grill for 2-3 minutes on each side for a medium doneness or to your preferred level of doneness.
  • Spray the green beans with olive oil spray and season with salt and pepper. Grill for 5-6 minutes until tender. Serve the steaks on a bed of mashed potatoes with the green beans and tomatoes.
