Steaks With Roquefort Sauce

A Spanish-inspired sauce that's a hit at parties, perfect for whiskey lovers. Swap brandy for whiskey or any non-sweet liquor if desired.
Ingredients:
  • 2 tablespoons butter
  • 4 (5 ounce) beef sirloin steaks
  • salt and coarsely ground black pepper to taste
  • 2 tablespoons brandy
  • 1 cup heavy cream
  • 3 ounces Roquefort cheese, crumbled
  • Italian flat leaf parsley, for garnish
Instructions:
  • In a hot skillet, melt butter and heat oil. Season steaks with salt and pepper, then sear on both sides until caramelized. Reduce heat to medium and cook steaks for 5 minutes on each side, or until cooked to your liking. Remove from skillet and keep warm.
  • Add brandy to the skillet and stir to scrape up the browned bits. Mix in cream and bring to a boil. Cook until the sauce thickens to coat the back of a spoon. Stir in cheese until melted. Pour the sauce over the steaks and garnish with parsley before serving.
