Steamed Asparagus with Hollandaise Sauce

Delicate steamed asparagus topped with rich Hollandaise sauce. Ideal for Mother's Day, brunch, or a fancy dinner side.
Ingredients:
  • 1 bunch asparagus (about 1 lb)
  • 10 Tablespoon unsalted butter (1 stick plus 2 Tbsp)
  • 3 egg yolks
  • 1 Tablespoon lemon juice
  • 1/2 teaspoon salt (skip if using salted butter)
  • Pinch of cayenne
Instructions:
  • Prep the asparagus by snapping off the tough ends and peeling the lower 2 to 3 inches of the spears with a vegetable peeler for an elegant touch. Set up a large shallow pan with a steamer rack and half an inch of water for steaming.
  • Make the Hollandaise sauce: Melt the butter in a small pot. In a blender, combine egg yolks, lemon juice, salt, and cayenne. Blend on medium to medium-high speed for 20-30 seconds until lighter in color. With the blender on the lowest setting, slowly pour in the hot melted butter. Blend for a few more seconds after all the butter is mixed. Taste, adjust seasoning with salt or lemon juice if necessary. Keep warm as you steam the asparagus.
  • Steam the asparagus until tender yet slightly crisp by placing it on the steaming rack over boiling water and covering it for 3 to 5 minutes, adjusting the timing based on the thickness of the spears.
