Elegant asparagus topped with light, creamy mayo.
Ingredients:
  • 1 cup mashed soft tofu (8 oz)
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 2 tablespoons finely chopped shallot (1 large)
  • 1 clove garlic, finely chopped
  • 2 teaspoons vegetable oil
  • 1 tablespoon chopped fresh tarragon leaves or 1 teaspoon dried tarragon leaves
  • 1 lb fresh asparagus spears
Instructions:
  • In a blender or food processor, combine tofu, lemon juice, mustard, salt, shallot, and garlic. Blend on medium speed until smooth. While blending, slowly add oil. Transfer the mixture to a glass or plastic container and gently mix in tarragon. Cover and refrigerate for at least 1 hour until chilled.
  • Set up a steamer basket in a saucepan or skillet with half an inch of water, ensuring the water does not touch the bottom of the basket. Arrange asparagus in the basket, cover tightly, and bring to a boil. Lower the heat and steam for 6 to 8 minutes until asparagus is crisp-tender. Enjoy with a side of mayonnaise.
