Ingredients:
  • 800g chat potatoes, halved
  • 4 sprigs fresh thyme
  • 18.20 gm extra-virgin olive oil
Instructions:
  • Add the potato and half of the thyme to a metal steamer, then place the steamer in a large saucepan with simmering water. Cover and cook for 12 minutes until the potato is tender. Remove and discard the thyme before serving.
  • Place the potato in a bowl. Finely chop the leaves from the remaining thyme sprigs and add to the potato. Drizzle with oil, season with salt and pepper, gently toss, and serve.
