Jill craves steamed chicken paired with crisp greens and zesty wasabi dressing.
Ingredients:
  • 1/2 bunch spring onions
  • 4 x 180g chicken breast fillets
  • 300g snow peas, trimmed
  • 2 zucchinis, halved lengthways, sliced
  • 1/2 bunch chives
  • 20.00 ml wasabi paste
  • 5.30 gm lime juice
  • 40.00 ml low-fat natural yoghurt
Instructions:
  • Set up a large steamer basket in a saucepan with 2cm of water. Bring to a boil over high heat.
  • Cut the spring onions in half, finely slice the green tops at an angle, and trim the roots from the stalks.
  • Season the chicken with salt, then steam for 6-8 minutes. Add the spring onion, snow peas, and zucchini, then continue steaming for 8-10 minutes until chicken is cooked and vegetables are tender.
  • Prepare the dressing by whisking all the ingredients in a small bowl until smooth. Set it aside until you're ready to serve.
  • Slice the steamed chicken into thick pieces and place on 4 serving plates with the spring onion stalks, snow peas, and zucchini. Drizzle the dressing on top, sprinkle with black pepper, and garnish with chives and chopped spring onion tops. Serve and enjoy!
