Try our simple and delicious British steamed pudding recipe, perfect for cozy nights with the family.
Ingredients:
  • 125g unsalted butter, softened, plus extra, for greasing
  • 110g caster sugar
  • Finely grated rind of 2 lemons
  • 21.00 gm lemon juice
  • 2 eggs
  • 225g self-raising flour
  • 180ml milk
  • 80g jam
  • Custard or thick cream, to serve
Instructions:
  • Prepare the 4-cup capacity porcelain pudding basin by greasing it with butter. In a mixing bowl, use an electric mixer to beat together butter, sugar, and lemon rind until light and fluffy. Mix in lemon juice and 1 egg, beating on medium speed until well combined. Add the second egg and continue beating until smooth. Sift in 1/2 cup flour and a pinch of salt, then gently fold in with a large metal spoon. Pour in the milk and sift the remaining flour over the batter, folding it in gently.
  • Fill the prepared basin with the batter and use a wet spoon to smooth the top. Create a pleat in the center of a sheet of baking paper and foil. Cover the basin with the prepared paper and foil, secure it with kitchen string, and trim any excess to prevent water seeping into the pudding.
  • 1. Place a trivet or upturned saucer in a large saucepan. Set the basin on top and add enough boiling water to reach halfway up the sides of the basin. Cover with a lid and simmer over low-medium heat for 1 3/4 hours or until a skewer inserted into the pudding comes out clean. 2. Remove the pudding from the saucepan. Take off the foil and paper. Let it stand for 5 minutes before inverting it onto a plate. 3. Heat jam in a small saucepan over medium heat until it becomes liquefied. Drizzle it over the pudding. Serve immediately with custard or thick cream.
