Ingredients:
  • 500 g seasonal fruit, such as rhubarb, plums, apricots, strawberries or pears
  • 2.5 cm piece of ginger optional, if using rhubarb
  • caster sugar to taste
Instructions:
  • Prepare the fruit by chopping it up, removing any stones, and placing it in a pan. If using rhubarb, peel and finely grate the ginger into the pan. Add the specified amount of sugar based on the fruit used, adjusting to taste if needed. Pour in 2 tablespoons of water and cook covered on medium heat until the fruit softens. Uncover and simmer until the liquid thickens. Enjoy this versatile compote with various dishes like cereal, yogurt, pancakes, or as a savory accompaniment to roast pork. Taste carefully as it will be hot.
