Tender stewed yellow squash with sweet Vidalia onions and salty bacon lardons for a delicious flavor combo.
Ingredients:
  • 2 slices bacon
  • 4 small crookneck (yellow) squash
  • 0.25 cup chopped Vidalia® onion
  • 2 tablespoons white sugar
  • 1 tablespoon salt
  • 2 teaspoons ground black pepper
  • 1 cup water, or as needed to cover
Instructions:
  • Slice the bacon into 1/4-inch thick strips, also known as lardons. Then, slice the squash and set it aside.
  • Fry bacon lardons in a saucepan over medium heat until they are beautifully crispy, for 5 to 7 minutes.
  • Combine the squash, onion, sugar, salt, and pepper with the bacon and bacon grease in a pot. Cover with water and simmer over medium-low heat for 45 minutes. Add extra water as necessary, as some will evaporate during cooking.
