Sticky orange carrot cake pudding with mascarpone cream

Carrot cake pudding: a cozy twist on a classic dessert.
Ingredients:
  • 90g unsalted butter, softened, plus extra for brushing pan
  • 150g raisins
  • 1.88 gm bicarbonate of soda
  • 225g plain flour
  • 3.00 gm baking powder
  • 1.88 gm ground cinnamon
  • 330g brown sugar
  • 2 large oranges, zest finely grated, juiced
  • 2 Free Range Eggs, at room temperature
  • 2.20 gm pure vanilla extract
  • 2 carrots, peeled, coarsely shredded (about 1 cup)
  • 50g walnut
  • 160ml thickened cream
  • 125g mascarpone
  • 40g icing sugar
Instructions:
  • Preheat your oven to 175C (155C fan-forced) and place a rack in the centre. Coat a 22cm x 12cm loaf pan generously with softened butter and line the base with baking paper.
  • In a medium saucepan over high heat, boil raisins with 1/2 cup (125ml) water until tender and liquid evaporates, about 4 mins. Reduce heat to medium, stir in bicarbonate of soda, then cool off the heat.
  • Combine flour, baking powder, cinnamon, and 1/4 tsp salt in a small bowl. In a large bowl, use an electric hand mixer to beat 90g butter, sugar, and 1 1/2 tsp orange zest until blended. Add eggs and vanilla; mix until light and airy. Slowly add 3/4 cup (185ml) orange juice and flour mixture in 2 batches. Fold in raisins, carrots, and walnuts.
  • Transfer the batter to the prepared pan and wrap it tightly with plastic wrap. Place the pan in a 33cm x 22cm baking dish and pour enough boiling water into the dish to reach halfway up the sides of the pan. Cover the baking dish tightly with foil. Bake in the oven for 1 hour and 45 minutes or until the cake springs back when touched gently and a toothpick inserted into the center comes out clean. Remove the foil and plastic wrap, let the pan cool on a wire rack for 10 minutes, then flip the cake onto a serving platter and slice.
  • In a medium bowl, use an electric hand mixer on medium speed to whip the cream, mascarpone, and sugar until soft peaks form. Enjoy with the cake.
