Stir-Fried Bok Choy with Tofu

Delicious tofu dish elevated by oyster sauce.
Ingredients:
  • 8 large bok choy stalks
  • 1 package (14 ounces) firm tofu
  • 2 tablespoons cornstarch
  • 3 shallots
  • 2 tablespoons vegetable oil
  • 2 tablespoons oyster sauce
  • 1/2 teaspoon salt
Instructions:
  • Separate the bok choy leaves from the stems. Slice the leaves into 2-inch pieces and the stems into 1/4-inch diagonal slices, keeping them separate. Cut the tofu into 1/4-inch slices and coat them with cornstarch. Thinly slice the shallots.
  • 1. Preheat a wok or 12-inch skillet over high heat. Add 2 tablespoons of vegetable oil and swirl to coat. Cook 2 pieces of tofu for 1 minute, turning once. Repeat with the rest of the tofu as needed. Return all tofu to the wok, add oyster sauce, and toss until coated evenly. Remove tofu from wok.
  • 1. Heat the wok over high heat, add 2 tablespoons of vegetable oil, and swirl to coat the sides. 2. Stir in the shallots and cook for 30 seconds. 3. Toss in the bok choy stems with salt and stir-fry for 1 minute. 4. Add the tofu and bok choy leaves, then cover and cook for 1 minute.
