Easy and delicious prawn and chicken stir fry ready in just 30 minutes.
Ingredients:
  • 150g fresh Asian noodles (such as Singapore or chow mein)
  • 21.00 gm soy sauce
  • 20.00 ml Chinese rice wine (shaohsing)
  • 5.00 gm caster sugar
  • 5.00 gm mild curry powder
  • 150ml chicken style liquid stock
  • 18.40 gm vegetable oil
  • 1 garlic clove, crushed
  • 1/2 tsp freshly grated ginger
  • 1 small red chilli, seeded, chopped
  • 1 chicken breast, thinly sliced
  • 300g cooked medium prawns, peeled, deveined, tails intact
  • 50g frozen peas
  • 2 spring onions, finely chopped
  • 1 egg, lightly beaten
  • 40.00 ml freshly chopped coriander, plus extra leaves to garnish
Instructions:
  • In a large bowl, place the noodles and cover them with boiling water. Let them soak for 2 minutes, then drain the noodles. In a small bowl, mix soy sauce, rice wine, sugar, curry powder, and stock.
  • In a sizzling wok, infuse oil with vibrant garlic, ginger, and chili over intense heat. Stir these aromatics for a minute, then introduce succulent chicken to the sizzle for a further 2 minutes.
  • Stir-fry prawns, peas, onion, noodles, and soy mixture for 1-2 minutes until everything is heated through.
  • Crack and add the egg, swiftly stirring to break it up, then mix in the coriander. Finish by garnishing with fresh coriander leaves.
