Master the art of savory stovetop pot roast with tender braised meat and flavorful vegetables.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 (3 pound) beef chuck roast
  • 4 cups water, or as needed
  • 4 stalks celery, chopped
  • 4 cloves garlic, crushed
  • 1 red onion, chopped
  • 1 tablespoon dried basil
  • salt and pepper to taste
  • 6 turnips, peeled and cut into chunks
  • 6 medium red potatoes, quartered
  • 6 carrots, peeled and cut into chunks
Instructions:
  • In a large pot or Dutch oven over medium-high heat, sear the roast in hot oil until all sides are beautifully browned.
  • Cover the roast with water in the pot and add celery, garlic, onion, basil, salt, and pepper. Bring to a boil, then simmer on low for 2 hours and 15 minutes. Add more water if needed to keep the roast covered.
  • Simmer the turnips and potatoes for another 15 minutes.
  • Add fresh, vibrant carrots and simmer gently for 30 minutes, or until the roast becomes fork-tender.
  • Adjust seasoning with salt and pepper to enhance flavors before serving.
