Ingredients:
  • 225g self-raising flour
  • 4.00 gm baking powder
  • 375ml buttermilk
  • 50g butter, melted, cooled
  • 1 egg
  • 250g (1 punnet) strawberries, washed, hulled, quartered
  • Pure maple syrup, to serve
Instructions:
  • Sift the flour and baking powder into a bowl then whisk in the buttermilk, butter, and egg until almost smooth. Allow the mixture to rest for 15 minutes.
  • Preheat a small non-stick frying pan over medium heat and brush with melted butter. Pour a heaped quarter cup of batter into the pan, spread slightly with a spoon, and cook for 2-3 minutes until bubbles form. Flip and cook for another 30-60 seconds. Keep warm by wrapping in a tea towel. Repeat for each batch, greasing the pan each time.
  • Plate the pancakes alongside the fresh strawberries and drizzle with maple syrup.
