Strawberries with passionfruit

Ingredients:
  • 500g fresh strawberries, hulled, halved
  • 40.00 gm caster sugar
  • 200g low-fat ricotta cheese
  • 1.10 gm vanilla essence
  • pulp from 4 passionfruit
Instructions:
  • Preheat the oven to 230°C. Line a baking tray with baking paper, then spread strawberries on it and sprinkle with sugar. Roast for 20 minutes or until the strawberries are tender.
  • Using an electric mixer, blend ricotta and vanilla until smooth. Gently fold in half of the passionfruit pulp.
  • Transfer the warm strawberries and syrup into serving bowls. Top with spoonfuls of ricotta mixture and finish with a drizzle of the extra passionfruit pulp.
