Indulge in refreshing strawberry basil ice cream on a sunny day.
Ingredients:
  • 750g strawberries, hulled, plus extra quartered strawberries to serve
  • 250.00 ml basil leaves
  • Juice of 1 orange
  • Juice of 1 lemon
  • 300ml thickened cream
  • 150g caster sugar
  • 12 basil leaves
  • 1 eggwhite, lightly beaten
  • 75g caster sugar
Instructions:
  • Blend together ripe strawberries, fresh basil, and zesty orange and lemon juices until velvety. Incorporate rich cream and sweet sugar with a quick pulse. Follow ice cream machine guidelines for churning. (Alternatively, freeze mixture in a shallow container for 2 hours until edges are frozen. Whip with electric beaters, refreeze, and repeat 2-3 times.) Store in a container and freeze until firm.
  • Brush basil leaves with egg white, coat in sugar, and shake off any excess. Place on a baking paper-lined tray and let stand at room temperature for 2 hours until crisp.
  • Garnish the ice cream with frosted basil leaves and additional quartered strawberries.
