Strawberry & white chocolate muffins

Ingredients:
  • 60g butter, at room temperature
  • 115g caster sugar
  • 2 eggs
  • 250ml milk
  • 4.40 gm vanilla extract
  • 375g self-raising flour
  • 250g (1 punnet) strawberries, washed, hulled, roughly chopped
  • 95g choc bits
Instructions:
  • Preheat your oven to 180°C and prepare 16 muffin pans by lining them with paper cases.
  • Cream together the butter and sugar until light and fluffy. Mix in the eggs, milk, and vanilla until well combined.
  • Using a large metal spoon, gently fold in the flour until just combined, then carefully mix in the strawberries and white chocolate chips.
  • Carefully fill the cases with the mixture and bake until beautifully golden, about 15-20 minutes.
