Ingredients:

3 large handfuls of strawberries preferably wild ones
1 fresh mint leaf
1 bottle of Prosecco or Champagne

Instructions:

Start by removing the hulls from the strawberries, then rinse and let them drain in a sieve with a mint leaf. Press the strawberries through the sieve into a bowl using the back of a spoon to extract the juice. Chill until serving time. Divide the strawberry purée evenly into six Champagne glasses and top up carefully with sparkling wine. Sip and enjoy!
