Indulgent breakfast trifle: fluffy pancakes, creamy cheese, juicy strawberries.
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 4 cups fresh strawberries, cut into quarters
  • 1/2 cup red currant jelly, melted
  • 2 packages (8 oz each) cream cheese, softened
  • 3/4 cup sugar
  • 1 cup whipping cream
Instructions:
  • Preheat griddle to 375°F or warm a 12-inch skillet over medium-low heat. Test the griddle by sprinkling a few drops of water - if bubbles jump around, it's ready. Grease with vegetable oil if needed.
  • Combine Bisquick mix, milk, and eggs in a large bowl until smooth. Pour slightly less than 1/4 cupfuls of batter onto hot griddle for each pancake. Cook until edges are set, then flip and cook until golden brown. Allow to cool completely.
  • In a large bowl, delicately coat the strawberries with the luscious melted jelly.
  • In a large bowl, use an electric mixer to blend the cream cheese and sugar until smooth. Gradually pour in the whipping cream. Increase the speed to high and beat until the mixture is light and fluffy.
  • In a 3 1/2-quart glass trifle bowl, layer half of the pancakes on the bottom. Set aside 1 cup of the cream cheese mixture. Spread half of the remaining cream cheese mixture over the pancakes and then add half of the strawberry mixture. Repeat with the remaining pancakes, cream cheese, and strawberry mixture. Finish by topping with the reserved 1 cup of cream cheese mixture. If desired, decorate with extra berries and mint.
