Strawberry Eton Mess for Mother's Day

Indulgent Eton mess dessert with caramelized almonds, tangy whipped cream, and marinated strawberries - ideal for Mother's Day or any celebration.
Ingredients:
  • 1 (16 ounce) package fresh strawberries, quartered
  • 2 tablespoons white sugar
  • 1 tablespoon raspberry vinegar
  • 12 leaves basil, sliced
  • 1 cup heavy cream
  • 1 tablespoon white sugar
  • 4 tablespoons sour cream
  • 2 ounces cream cheese, softened
  • 3 tablespoons white sugar, or as needed
  • 0.25 cup chopped almonds, or to taste
  • 1 (4.3 ounce) package plain meringue cookies, coarsely crushed
Instructions:
  • In a bowl, mix together strawberries, 2 tablespoons sugar, balsamic and raspberry vinegars, and basil. Allow the mixture to rest until the strawberries have released their juices and soaked up the flavors, for at least 15 minutes.
  • In a chilled glass or metal bowl, use an electric mixer to whip heavy cream until frothy. Gradually add 1 tablespoon of sugar while continuing to beat until soft peaks form. Blend in sour cream and cream cheese until evenly mixed.
  • Sprinkle sugar into a heavy saucepan to cover the bottom with a thin layer. Cook over medium heat, adding more sugar as it melts. Stir until caramelized and amber. Mix in almonds, pour onto parchment paper, cover with another sheet, and roll into a thin layer using a rolling pin. Let cool and break into pieces.
  • In each of the 4 serving dishes, alternate layers of marinated strawberries and cream, topping each layer with crushed meringues. Finish by garnishing the top with caramelized almond pieces, more meringues, and strawberries.
