Whip up a stunning cake with vibrant strawberry buttercream frosting using Betty Crocker™ Super Moist™ white cake mix for a simple yet impressive treat bursting with summer flavors.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and whole eggs called for on cake mix box
  • 3/4 cup butter, softened
  • 4 1/2 cups powdered sugar
  • 1/3 cup seedless strawberry jam
  • 1 teaspoon vanilla
  • Betty Crocker™ Red Gel Food Color
  • 1 cup sliced fresh strawberries (about 10 medium)
  • Whole fresh strawberries
Instructions:
  • Preheat the oven to 350°F (or 325°F for dark or nonstick pans) and generously spray 3 (8-inch) round cake pans with cooking spray.
  • In a large bowl, use an electric mixer on medium speed to beat the Cake ingredients for 2 minutes, making sure to scrape the bowl occasionally. Divide the batter evenly between the pans.
  • Bake for 17 to 20 minutes until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes before removing from pans onto cooling racks. Allow to cool completely for about 45 minutes.
  • In a large bowl, use an electric mixer to blend together softened butter and cream cheese until smooth. Gradually add powdered sugar while mixing on low speed until creamy. Then, mix in strawberry jam and vanilla until well combined. Adjust the frosting's color by adding food coloring to your preference.
  • Place the first cake layer rounded side down on a serving plate, generously spread 2/3 cup of the frosting on top. Layer 1/2 cup of sliced strawberries in a single layer on the frosting, making sure to leave a small border around the edge of the cake. Add the second cake layer rounded side down, repeat frosting with 2/3 cup, and arrange the rest of the sliced strawberries. Place the final cake layer rounded side up. Frost the sides and top of the cake with the remaining frosting. Chill the cake for at least 1 hour before serving. Garnish the top of the cake with whole strawberries. Store any leftovers in the refrigerator.
