Strawberry Hot Fudge Cheesecake

Decadent cheesecake elevated with hot fudge and strawberry topping.
Ingredients:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup butter or margarine, melted
  • 3/4 cup hot fudge sauce
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 1/3 cups sugar
  • 1 teaspoon vanilla
  • 1/3 cup strawberry preserves, melted
Instructions:
  • Preheat the oven to 325°F. Combine cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture evenly into the bottom and 2 inches up the sides of a 9x3 inch springform pan. Bake for 5 minutes.
  • Heat up the hot fudge sauce in the microwave according to the jar instructions. Then generously pour the warm fudge sauce over the crust, making sure to spread it evenly.
  • In a large bowl, use an electric mixer to blend cream cheese until smooth. Gradually mix in 1 1/3 cups sugar and vanilla until smooth. Add eggs one at a time. Pour mixture over hot fudge sauce.
  • Bake the cheesecake until set, for about 55 to 65 minutes; then let it cool for 15 minutes. Run a metal spatula along the sides to loosen it. Next, refrigerate it for at least 8 hours. Finally, spread melted strawberry preserves over the top before refrigerating any leftovers.
