Indulge in a refreshing strawberry Italian soda in the summer: strawberry syrup mixed with club soda over ice, topped with a splash of milk and whipped cream.
Ingredients:
  • Whipped cream
  • For the strawberry syrup
  • 1/2 cup (100g) sugar
  • 1/2 cup water
  • 1 1/2 cups (8 ounces) strawberries, hulled and quartered
  • For the whipped cream
  • 1/2 cup heavy cream
  • 2 tablespoons (18g) powdered sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For the Italian soda
  • 1/3 cup strawberry syrup
  • 1 teaspoon fresh lemon juice
  • 3/4 cup (6 ounces) club soda
  • 2 tablespoons half-and-half
  • To serve
  • Maraschino cherry, for garnish
Instructions:
  • To create delicious strawberry syrup, simply combine sugar, water, and fresh strawberries in a pot over medium heat. Allow the mixture to simmer until the strawberries are tender, around 7 minutes. Strain the syrup through a fine mesh sieve into a bowl, removing the strawberries. The resulting syrup will be a beautiful ruby red, sweet, and bursting with strawberry essence. Cool the syrup to room temperature for about 30 minutes before incorporating it into your culinary creations.
  • Prepare the whipped cream: In a medium bowl, mix the heavy cream, powdered sugar, vanilla extract, and salt. With a hand mixer, whip the cream from low to medium speed until stiff peaks form, about 90 seconds. The whipped cream should hold its shape. Be cautious to avoid overwhipping. Chill covered until needed.
  • For the Italian soda: Combine 1/3 cup strawberry syrup and lemon juice in a glass measuring cup. Stir well. Pour over ice in a tall glass. Top with club soda. Add half-and-half and stir to mix. Finish with whipped cream, cherry, and a straw. Enjoy right away!
