Homemade cinnamon doughnuts with a gooey, doughy center are irresistibly delicious.
Ingredients:
  • 340g (2 1/4 cups) plain flour
  • 40.00 gm caster sugar
  • 2 1/2 tsp dried yeast
  • Pinch of salt
  • 125ml (1/2 cup) milk, warmed
  • 50g butter, melted
  • 2 eggs, lightly whisked
  • 5.00 gm ground cinnamon
  • 370g strawberry conserve
  • Vegetable oil, to deep-fry
Instructions:
  • In a bowl, mix together flour, sugar, yeast, and salt. Create a hole in the center and pour in the milk, butter, and eggs. Stir until a sticky dough forms. Transfer the dough onto a floured surface and knead until smooth. Place in a greased bowl, cover, and leave in a warm spot to rise for 1 1/2 hours or until doubled in size.
  • On a floured surface, knead dough for 2 minutes and roll out to 1cm thickness. Use a 7cm round cutter to cut out discs. Place on a lined baking tray. Lightly knead leftover dough and repeat until you have 12 discs. Allow to rest in a warm place for 30 minutes to rise slightly.
  • Mix sugar and cinnamon in a bowl. Fill a piping bag with conserve using a 5mm round nozzle. Heat oil in a saucepan to 180oC (oil is ready when bread turns golden in 15 seconds). Deep fry doughnut discs in batches for 1 minute on each side until golden. Drain on paper towel. Cut a hole in each doughnut, fill with conserve, then roll in cinnamon sugar.
