Strawberry liqueur sorbet with strawberry salad

Ingredients:
  • 370g caster sugar
  • 330ml water
  • 750g strawberry
  • 300g pkt frozen strawberries, thawed
  • 48.00 gm icing sugar mixture
  • 60ml liqueur
  • 500g strawberry
  • 200g blueberry
  • 62.50 ml strawberry liqueur
  • 62.50 ml mint leaves, finely shredded
Instructions:
  • In a medium saucepan over medium heat, merge the sugar and water. Stir and cook for 1-2 minutes until the sugar dissolves. Let it cool before using.
  • In a large bowl, mix together fresh and thawed strawberries. Add icing sugar and liqueur, then let it sit for 10 minutes to soak and develop flavors. Transfer the strawberry mixture to a food processor and blend until smooth. Strain the mixture through a fine sieve, pressing with the back of a spoon to remove excess pulp. You should have approximately 900ml of puree. Finally, stir in the cooled sugar syrup.
  • Spread the mixture in a shallow metal tray, cover with foil, and freeze for 6-8 hours until firm. Break up the sorbet with a metal spoon and blend in batches in a food processor until smooth. Transfer the mixture to an airtight container and freeze for 2-3 hours until firm. Serve and enjoy your 1.2 liters of sorbet!
  • In a medium bowl, toss together strawberries, blueberries, icing sugar mixture, strawberry liqueur, and mint. Chill in the fridge covered with plastic wrap. Serve the fruit salad with scoops of sorbet.
