Impress your guests with this dessert recipe that serves 20.
Ingredients:
  • 2kg strawberries, hulled, chopped
  • 2 lemons, juiced
  • 645.00 gm caster sugar
  • 112.50 gm gelatine powder
  • 187.50 ml orange liqueur (such as Cointreau)
  • Double cream, to serve
Instructions:
  • Split strawberries evenly between 2 large heatproof bowls. Set over 2 large saucepans of simmering water. Cook, stirring occasionally, for 30 to 40 minutes or until strawberries are soft. Remove from heat.
  • Prepare a double layer of muslin in two large sieves placed over bowls. Gently pour the strawberry mixture into the sieves, ensuring it is evenly divided. Allow it to sit undisturbed for 3 to 4 hours until fully strained (avoid pressing or stirring to maintain clarity). Remove and discard any remaining pulp from the sieves.
  • In a saucepan over low heat, mix together the strawberry liquid, 1/2 cup lemon juice, caster sugar, and 8 cups cold water. Stir and cook for 15 minutes until the sugar dissolves. Then, increase the heat to high, bring it to a boil, and remove from heat.
  • In a microwave-safe bowl, stir together gelatine and 1 cup of cold water using a fork. Microwave the mixture, uncovered, on HIGH for 1 to 1 1/2 minutes. Stir with a fork until the mixture is clear. Combine the hot gelatine mixture with the hot strawberry mixture, then mix in the orange liqueur thoroughly.
  • Fill cups three-quarters full with the mixture, cover with plastic wrap, and refrigerate overnight or until set. Finish by topping each with a dollop of cream before serving.
