Buttery shortbread layered with strawberry preserves and almond streusel creates delectable bars.
Ingredients:
  • 1 cup butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed almond paste (from 7-oz roll), crumbled (not marzipan)
  • 1/4 cup sliced almonds
  • 1 jar (12 oz) strawberry preserves
  • 1 teaspoon powdered sugar
Instructions:
  • Preheat the oven to 350°F. Line a 9-inch square pan with foil, allowing a 1-inch overhang on two opposite sides, and generously spray the foil with cooking spray.
  • In a large bowl, use an electric mixer to blend butter and granulated sugar until well combined. Add flour and salt and mix until just blended. Press 3 1/2 cups of the mixture into a pan and bake for around 20 minutes until the top starts to brown.
  • In the same bowl, combine the remaining crumb mixture and crumbled almond paste using a fork until small clumps form, then mix in the almonds.
  • Spread the preserves evenly on the hot base, then sprinkle the almond paste mixture evenly over the preserves and gently press down.
  • Bake for 25 to 30 minutes until the top and edges turn golden brown and the preserves bubble. Lift the bars using the foil handles and let them cool completely on a rack before cutting. Sprinkle powdered sugar on top, then cut into 8 by 4 rows and diagonally halve each square.
