Strawberry-Rhubarb Squares

Delicious large-batch red dessert!
Ingredients:
  • 1 cup butter or margarine, softened
  • 1 cup packed brown sugar
  • 1 1/2 cups quick-cooking oats
  • 2/3 cup chopped nuts
  • 1/2 teaspoon baking soda
  • 2 cups granulated sugar
  • 2/3 cup Gold Medal™ all-purpose flour
  • 2 tablespoons milk
  • 4 eggs
  • 4 cups sliced strawberries (2 pints)
  • 4 cups sliced rhubarb (8 stalks)
  • Whipped cream or ice cream, if desired
Instructions:
  • Preheat the oven to 375°F. In a medium bowl, combine butter, brown sugar, and vanilla using a spoon. Mix in 2 cups of flour, oats, nuts, baking soda, and salt until it's crumbly. Set aside 2 cups of the crumbly mixture. Press the remaining mixture into an ungreased 15x10x1-inch pan.
  • Combine granulated sugar, 2/3 cup flour, milk, and eggs in a large bowl, mixing with a spoon until smooth. Gently fold in strawberries and rhubarb. Spread filling over crust and top with reserved crumbly mixture.
  • Bake until topping is golden brown and filling is set, about 40 to 50 minutes. Cool for about 30 minutes. Cut into serving pieces by creating 5 rows by 4 rows. Enjoy with whipped cream and store covered in the refrigerator.
