Moist and tasty pancakes made special with vanilla yogurt.
Ingredients:
  • 1 1/2 cups Gold Medal™ white whole wheat flour
  • 3 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3 eggs
  • 1 container (6 oz) vanilla low-fat yogurt
  • 3/4 cup water
  • 3 tablespoons vegetable oil
  • 1 3/4 cups sliced fresh strawberries
  • 1 container (6 oz) strawberry low-fat yogurt
Instructions:
  • Preheat griddle or skillet over medium-high heat until it reaches 375°F. Brush with vegetable oil or spray with cooking spray before heating.
  • In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a medium bowl, whisk together eggs, vanilla yogurt, water, and oil until smooth. Pour the egg mixture into the flour mixture and mix until just combined.
  • Pour a generous drizzle of less than 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbly on top, puffed, and dry around edges, then flip and cook until golden brown on both sides.
  • Garnish each portion (2 pancakes) with 1/4 cup of sliced strawberries and a dollop of 1 to 2 tablespoons of strawberry yogurt.
