Prepare a flavorful frozen breakfast blend with potatoes, onions, and bell peppers for effortless mornings.
Ingredients:
  • 6 large russet (baking) potatoes
  • 1 large green bell pepper, cut into 1/2-inch dice
  • 1 large red bell pepper, cut into 1/2-inch dice
  • 1 large onion, cut into 1/2-inch dice
Instructions:
  • In a large pot, cover the potatoes with salted water and bring to a boil. Simmer on medium-low heat for 10 minutes, then drain and set aside to cool. Once cooled, dice into 1/2-inch pieces.
  • Mix the potatoes, green bell pepper, red bell pepper, and onion in a bowl. Drizzle with vegetable oil and toss gently to coat evenly. Transfer the mixture into resealable freezer bags and store in the freezer.
  • Cook the frozen mixture in a nonstick skillet over medium-high heat until crispy and golden brown, stirring occasionally, for about 20 minutes.
