Upgrade your weeknight dinner with a gourmet twist on beef Stroganoff casserole, complete with fresh mushrooms, spinach, saltines, and flavorful Muenster cheese.
Ingredients:
  • 1 tablespoon butter
  • 1 pound ground beef
  • 0.75 teaspoon ground black pepper
  • 0.5 teaspoon onion powder
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 0.5 cup sour cream
  • 12 saltine crackers
  • 1 (10 ounce) box frozen chopped spinach, thawed and squeezed dry
  • 1 (4 ounce) package sliced button mushrooms, or more to taste
  • 4 slices Muenster cheese
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), then generously coat a 2-quart baking dish with creamy butter.
  • In a large skillet over medium heat, brown ground beef while mixing in pepper, onion powder, and salt. Cook for 5 to 8 minutes until fully cooked.
  • Combine the cream of mushroom soup and sour cream in a bowl.
  • Start by lining the bottom of the baking dish with 6 saltine crackers. Follow by adding half of the ground beef and a dollop of one-third of the mushroom soup mixture. Top with the remaining saltines. Layer spinach over the saltines and pour another one-third of the mushroom soup mixture. Add the remaining ground beef and mushroom soup mixture. Finish by covering with mushrooms.
  • Bake in the preheated oven until bubbly, roughly 30 minutes. Add Muenster cheese on top and bake for an extra 5 minutes until melted.
