Indulgent roast beef in creamy stroganoff sauce with mashed potatoes and green beans.
Ingredients:
  • 24.40 gm Worcestershire sauce
  • 800g piece scotch fillet, topside or eye fillet
  • 5.00 gm sweet paprika
  • 22.20 gm tomato paste
  • 127.50 gm beef stock
  • 250g button mushrooms, sliced
  • 1 red onion, cut into thin wedges
  • 40.00 ml thyme leaves
  • 117.50 gm sour cream
  • Mashed potato, to serve
  • Steamed green beans, to serve
Instructions:
  • Preheat your oven to 200°C. Brush the beef with oil, then generously coat it with paprika, salt, and pepper. Transfer the seasoned beef to a large roasting pan and roast for 20 minutes.
  • In a bowl, mix together tomato paste, Worcestershire sauce, and stock. Add in mushrooms, onions, and fresh thyme. Stir well to combine all ingredients.
  • Take the beef out of the oven and smother it with the delicious mushroom mixture. Roast the beef for an additional 20 minutes for a perfect medium doneness, or cook it longer to your preference. Place the beef on a plate, cover it, and let it rest in a cozy spot for 10 minutes.
  • Add the sour cream to the mushrooms in the pan and stir until fully mixed.
  • Slice beef thinly across the grain, arrange on plates, and drizzle with flavorful mushroom sauce. Serve alongside creamy mashed potatoes and tender steamed green beans.
