Elegant stuffed chicken breasts with spinach, bacon, sun-dried tomatoes, and cheese - perfect for entertaining.
Ingredients:
  • 1 egg
  • 4 skinless, boneless chicken breast halves
  • 5 ounces frozen chopped spinach, thawed and drained
  • 0.5 cup crumbled cooked bacon
  • 0.5 cup chopped sun-dried tomatoes
  • 0.5 cup grated sharp Cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup mayonnaise
  • 3 cloves garlic, crushed
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • Whisk the egg in a shallow bowl, then dip and coat the chicken breasts in the egg.
  • Preheat a nonstick pan over medium-high heat. Cook chicken until both sides are golden brown, about 5 to 7 minutes.
  • In a medium bowl, mix together fresh spinach, crispy bacon, ripe tomatoes, sharp Cheddar cheese, creamy mozzarella cheese, rich mayonnaise, and savory garlic.
  • Butterfly cut each chicken breast to create a pocket and stuff liberally with spinach mixture.
  • Arrange stuffed chicken pieces in the baking dish with the stuffing on top, ensuring they are secure. Season each with salt and pepper. Cover the dish.
  • Roast in the hot oven until the chicken is fully cooked and the juices run clear, approximately 40 minutes.
