Bacon-stuffed chicken breast with Italian bread crumbs and Parmesan - a sure family favorite!
Ingredients:
  • 1 tablespoon olive oil
  • 2 cups Italian bread crumbs, divided
  • 4 slices peppered bacon
  • 4 (5 ounce) skinless, boneless chicken breast halves
  • 0.5 cup shredded Parmesan cheese, divided
  • 2 large eggs, well beaten
Instructions:
  • 1. Preheat the oven to 350°F (175°C). Grease the baking dish with olive oil and sprinkle 3 pinches of breadcrumbs evenly on the bottom.
  • Cook the bacon in a large skillet over medium-high heat, turning occasionally, until perfectly browned and crispy, about 10-11 minutes. Drain on paper towels.
  • Butterfly chicken breasts and stuff each with 2 tablespoons chopped Parmesan cheese. Layer with bacon slices and 1 1/2 tablespoons shredded Parmesan on top.
  • Seal the chicken breasts. Coat them in beaten egg followed by breadcrumbs. Arrange in the baking dish and top with the leftover shredded Cheddar.
  • Bake until chicken is cooked through and reaches an internal temperature of 165 degrees F, about 35 minutes.
