Impress your guests with Chicken Valentino - a gourmet dish featuring creamy mozzarella, roasted red peppers, and savory Alfredo sauce over pasta. Perfect for a fancy dinner at home!
Ingredients:
  • 4 skinless, boneless chicken breast halves
  • 1 teaspoon dried Italian seasoning
  • 2 tablespoons grated Parmesan cheese
  • 1 (6 ounce) jar roasted red bell peppers, drained
  • 0.25 cup chopped fresh chives
  • 4 tablespoons shredded mozzarella cheese
  • salt and pepper to taste
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a baking dish.
  • Butterfly the chicken breasts by slicing each one in half lengthwise, leaving them attached on one side. Open the breast and lay it flat to resemble a butterfly shape. Place each breast between two sheets of plastic wrap and gently pound them flat. Repeat the process for the remaining chicken breasts.
  • Mix Italian seasoning, Parmesan cheese, and chives in a bowl; then sprinkle over chicken breasts. Add 3 strips of roasted pepper and 1 tablespoon shredded cheese to one end of each breast. Roll up each breast, starting from the side with peppers and cheese. Secure with toothpicks to prevent unrolling. Place in a baking dish. Season with salt and pepper, and drizzle with olive oil.
  • Place in a preheated oven for 15 minutes, then switch to broil and cook for an additional 5 to 10 minutes.
  • Slice the dish to reveal its vibrant filling and serve.
