Stuffed Jalapeno Sliders

Spicy jalapeno and cheese stuffed burger sliders.
Ingredients:
  • 0.5 small onion, diced
  • 0.25 pound extra-lean ground beef
  • 2 tablespoons water
  • 1.5 teaspoons taco seasoning
  • 0.5 cup grated Chihuahua cheese
  • 5 large jalapeno peppers
  • 0.25 cup lukewarm water
  • 2 tablespoons white sugar
  • 2 teaspoons active dry yeast
  • 1.5 cups all-purpose flour
  • 2 small eggs, beaten, divided
  • 2 tablespoons milk
  • 1 tablespoon unsalted butter, melted
  • 40 toothpicks
Instructions:
  • 1. Heat oil in a skillet over medium heat until shimmering. Add onion and cook, stirring occasionally, until soft, about 5 minutes. Add beef and cook, breaking it into small pieces with a spoon, until browned, about 5 minutes. Drain any excess grease. Stir in 2 tablespoons of water and taco seasoning, and cook until the water evaporates, about 5 minutes.
  • Allow the beef mixture to cool for 10 minutes, then mix in the Chihuahua cheese.
  • Preheat the oven to 350°F (175°C).
  • Prepare the jalapeno peppers by removing the tops, seeds, and ribs. Fill them with the beef mixture, using a chopstick to tightly pack it in. Arrange the stuffed peppers along the edge of a casserole dish in an upright position.
  • Roast the jalapeno peppers in the oven until they are tender, approximately 45 minutes.
  • Chill jalapeno peppers until the filling sets, approximately 1 to 2 hours.
  • In a small bowl, mix 1/4 cup water, sugar, and yeast. Allow it to sit until it becomes foamy, approximately 5 minutes.
  • In a large bowl, mix together flour, 1 egg, milk, and butter. Add yeast mixture and stir until fully combined. Transfer dough to a lightly floured surface and knead for about 5 minutes until mostly smooth but slightly sticky.
  • Shape dough into a ball and transfer it to a lightly greased bowl. Cover with a towel and allow to rise for approximately 20 minutes.
  • Prepare a baking sheet with parchment paper. Transfer the dough to a floured surface; gently press to remove air bubbles. Shape into 1-inch buns and place them 1 inch apart on the baking sheet. Cover with a towel and allow to rise until puffy, approximately 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C), then brush the tops of the buns with beaten egg for a golden finish.
  • Bake buns in the preheated oven until tops are golden brown, about 6 to 7 minutes. Then, transfer to a cooling rack and let them cool for about 10 minutes.
  • Lower the oven temperature to 200 degrees F (95 degrees C).
  • Slice cold jalapeno peppers into 1/4-inch thick rings. Cut buns in half horizontally to create the top and bottom halves. Fill the buns with the jalapeno pepper rings and secure with a toothpick. Place the sliders in a casserole dish and cover with aluminum foil.
  • Bake sliders in the preheated oven for 10 minutes until warm.
